In autumn, white tea flowers grow, sway, and flow in the wind. For the farmer, these scenes evoked images of shirabyōshi, or Japanese women performers who dressed in men's attire while singing and dancing in the 12th century.
This matcha is made using a traditional method, which involves picking, steaming, and then drying the leaves to make tencha. From there, the tencha is left in an underground warehouse for six months to dry before being ground as matcha.
Once prepared, this matcha has fresh oceanic notes with a slight earthiness, reminiscent of seaweed and brazil nuts. Enjoy hot, over ice, or with ice cream.
