Yoshiyuki Tamura, or Yoshi, is a 13th-generation tea farmer with a background in fashion and design. He is currently the president of Organic Matcha Japan and is passionate about organic farming practices.

This tea is grown on a JAS-certified organic farm, meaning it is locally certified as organic in Japan.

Preparation

USUCHA ("THIN" MATCHA) • GRASSY + MAXIMUM BENEFITS 

  • Heat 2 oz (¼ cup) spring or filtered water to 175°F / 79°C.
  • Sift ½ tsp (2–3 g) matcha into chawan (matcha bowl) or katakuchi (spouted bowl), then slowly pour in water.
  • Whisk briskly in a zig-zag motion for 15 sec or until froth appears. Alternatively, you may use an electric frother in a tall beaker.

About matcha (抹茶)

Matcha is made from finely ground shade-grown tea leaves called "tencha." It contains about three times the antioxidants of regular green tea and is an excellent source for powerful catechins such as epigallocatechin gallate (EGCG) that are believed to have cleansing, anti-viral effects.

Wish this Matcha was year-round!

This limited edition Matcha was recommended to me in store. I partly picked it out because the tin it comes in was so aesthetic. Drinking and experiencing the Matcha was a whole other experience. This matcha is the most smooth and velvety with a strong and concentrated flavor profile. It pairs exceptionally well with milk and I enjoy making iced matcha latte's with it. If you haven't tried this matcha yet, and they are still in stock, make sure you try this before they sell out!

Velvety and great with a splash of milk!

I picked up a tin of Yoshi’s Matcha after the owner Amy recommended it to me in-store, and I’m so glad I did! The scent has sweet undertones that almost remind me of cocoa, similar to other matchas I’ve tried from the Shizuoka region.

Prepared as usucha, the texture is velvety and smooth, with a strong flavor. I’d probably use a slightly lower water temperature than the suggested 79°C to cut down on the bitterness, but it’s still just as enjoyable. Just as recommended, it really shines in lattes. The flavor holds up really well with the creaminess of milk, and the tea flavor stands out perfectly instead of fading away.

If you’re someone who enjoys versatility in matcha, make sure to grab yourself a tin as these are limited!
