"Ya Shi" means "duck shit" and refers to a Dancong or twisted-style oolong cleverly named by the original farmer to help protect it from being replicated by competitors. Known for its prominent floral and almond-like tasting notes, the texture of this year's batch is especially tasty and reminds us of butter cookies.
