Shincha, or “new tea” in Japanese, is the first harvest of tea after winter, and this one has distinct notes of walnut and spinach. Its aroma is sweet and savory like pistachios. Short steeps will yield softer, sweeter notes while longer steeps will help bring out a slight nuttiness.
