Often translated as “jewel dew,” gyokuro is becoming more and more popular to taste alongside sencha. This version is earthy and vegetal, reminiscent of bean sprouts and spinach. Brewing at lower temperatures can help draw out pleasant notes of water chestnut and sea salt. Enjoy in small sips.
